Employing just one person puts a chef into a not so wonderful maelstrom of employee relations and laws. Suddenly you aren’t dealing with recipes and food costs; you are working with forms, taxes, records, policies, job descriptions, evaluations, schedules, training activities… and so on.
What do you want your employees to say about your restaurant when speaking to guests? Do they know its history, reservation policy, or credit card policy? What are your policies regarding sexual harassment, vacations, overtime, uniforms, meals, punctuality, parking, illness, or employing close relatives? When do you pay? What time-keeping procedures must your employees follow?
