Using The Book of Yields to help understand Food Measurements, Kitchen Math,
Food and Recipe Costing and Food Purchasing just got a LOT EASIER!

DESK has published a set of quizzes and exercises online for students and
teachers. Students can download it all or any part of it by clicking on
the button at right. Just select the Quiz or Exercise you want and print it
out.
These quizzes and exercises follow the same sequence of topics found in
The Book of Yields. They enable the user to efficiently find key information
in The Book of Yields and put its data and formulas to work solving food
costing and food purchasing “problems”.
Each Quiz lists the section numbers in The Book of Yields where the information
needed to solve the problems is found.
The Quizzes and Exercises are broken down into three groups:
- Measurement and Costing Quizzes
- Purchasing Quizzes
- Recipe Costing Exercises
Students using The Book of Yields will find the Quizzes and Exercises to
be helpful and useful learning tools. They bring The Book of Yields and its
Workbook together in a very practical way. The Food Prices in the Workbook
are used throughout the Exercises and Quizzes. The Workbook sheets will guide
you through the basic steps required to convert Purchase amounts to Recipe
amounts and also reverse this process...going from a Recipe amount back to
a Purchase amount. The weight-to-volume conversion factors and the trim/cooking
yields in The Book of Yields tie it all together, giving you a practical,
indeed a professional, approach to costing and purchasing. By taking the
quizzes and completing the exercises, you will gain valuable experience and
knowledge and have the cost control skills needed to succeed in Food Service.
