A former financial analyst for Dun & Bradstreet, Francis followed his father’s and grandfather’s footsteps into a cooking career. Francis has been an American chef for over 25 years. He learned his craft in a 3-star French restaurant in Ithaca, New York. After expanding his repertoire in Caribbean resort hotels on the islands of Aruba and Bonaire as well as at a Vermont ski lodge, Francis returned to his native California. In the 80’s Francis earned his teaching credential and began instructing burgeoning new chefs. During this time he wrote "Garnishing - A Feast For Your Eyes", which has sold over 150,000 copies to date. |

From 1989 through 1996, Francis directed the Culinary Instruction program at Columbia College, in Columbia, CA. In early 1997 Francis shifted his attention to the development of ChefDesk.com. ChefDesk is dedicated to helping chefs find organized culinary and restaurant information on the Internet. Francis lives in Sonora, California. |
